For how many rolls is this fixer? Is it better to make 500 ml mix and keep the powder sheild?

It simply depends on how fast you intend to use the fixer. I have had some I users for over a year (in controlled conditions) and it works well.

It's the stock. You will mix it with more water for your 1:1 ratio

How long exactly does it last after mixing it with water? Also, how should the mixture be stored?

It should last indefinitely. No special storage necessary.

Do you have to mix the whole gallon at once, or are there directions to mix smaller batches?

There aren't directions that i know of but online im sure you could find info. I've been doing 1/4th of the bag at a time and just mixing 1/4 of the water it says to mix. This will extend the shelf life of your mixed solution in case you are someone who reuses fixer and doesn't need a huge batch of fixer at once.
